    INGREDIENTS

    **for the lamb and onions: **1 pound|450 grams boneless Halal lamb shoulder, trimmed and cut into 3 to 4-inch pieces 
    kosher salt and freshly ground black pepper, to taste
    3 tablespoons olive oil
    2 tablespoons Dijon mustard
    2 tablespoons minced garlic
    2 tablespoons red wine vinegar 
    1 teaspoon chili flakes
    1 lemon
    2 medium yellow onions, sliced into ½-inch thick pieces (about 12 ounces|340 grams)
    1 tablespoon whole grain mustard

    **for the mustard sauce: **¼ cup|60 grams Dijon mustard
